For those of us that have experienced the deliciousness of Ruby Tuesday's Chicken Parmesan Pasta, I'm sure we'd all like some sort of copycat recipe. Well, I have it! I was playing around in my kitchen one day and kinda just put this together. It doesn't taste exactly like Ruby Tuesday's but it's a decent second.

Copycat Ruby Tuesday's Chicken Parmesan Pasta:

Preheat your oven to 375

1LB of Penne (or Ziti) pasta
Water to boil pasta
Salt (desired amount)
Fill desired pot about 6/8 full of water. Put water on heat until boiling. Throw salt in boiling water, and then throw pasta in water. Cook pasta until al dente.

4 (four) thin cut chicken breasts
1 cup of italian breadcrumbs
3/4 cup of parmesan cheese
Pinch of salt
1/2 teaspoon of black pepper
1.5 Cup of all purpose flour
2 (Two) eggs
1/4 cup of milk
Enough vegetable oil to fill bottom of pan
Combine breadcrumbs, cheese, salt, and pepper on hard surface (I use aluminum foil so it's less to clean up) to form a breading. Dump flour next to the breading. Then combine eggs and milk in a shallow container. Bread the chicken as such: egg mixture, flour, breadcrumb mixture. Fry the breaded chicken until golden brown on both sides. Cool chicken, and cut into horizontal pieces. It is okay if the chicken isn't completely cooked, but it should be about 90% done.


1/2 cup of butter
1 cup heavy whipping cream
1/2 cup of flour
1.5 cup of parmesan cheese
1/8 teaspoon of grated black pepper
Desired amount of parsley
If this sauce is too thick for your liking, you can thin it with milk. Just be careful doing that. You don't want it super thin.
Melt butter in medium saucepan. Then add heavy whipping cream. Whisk mixture. Add flour and parmesan cheese. Whisk thoroughly. Add in pepper, parsley, and if needed, milk. Let sauce simmer on low heat, covered.

1 jar of your favorite tomato spaghetti sauce
1LB of swiss cheese

Line casserole dish with foil and spray with cooking spray.
Now, you should have your penne pasta, cut chicken, a white sauce, and your tomato sauce.  Layer as such: Tomato sauce, chicken, white sauce, pasta and repeat. Top with swiss cheese. (You might not use a whole pound BUT if you like cheese like I do, it's good to have it, just in case. ) Next, put it in the oven for about 10-15 minutes, or until the cheese completely melts. Let it cool, serve, and enjoy!
